Aros con Pollo (low-sodium)
Ingredients
1 - 1 1/4 cup uncooked whole grain rice
1 garlic clove (minced)
1 onion (snippered)
1 medium carrot (diced)
1 medium red bell pepper (diced)
100 gr leeks (diced)
1 tsp chili flakes
1 tbsp tomato paste
1 tbsp tomato paste
1 tbsp low sodium soy sauce
300 gr green peas
For chicken:
500 grams chicken brast
2 tbsp garlic powder
2 tbsp paprika powder
2 tbsp cumin
2 tbsp olive oil
Instructions
Preheat oven to 200C.
Mix garlic powder, paprika powder, and cumin and season the chicken.
Coat the chicken in olive oil and add to oven dish. Put the chicken in the oven for 25-30min.
Add rice with the same amount of water to a rice cooker.
Mince garlic and dice the onion, carrots, leeks, and bell peppers.
When Chicken is cooked thoroughly, remove from oven and shred with two forks.
Add olive oil to a pan on medium heat.
Sauté onions, carrots, and bell peppers for 5 min.
Add tomato paste, low sodium soy sauce, leeks, green peas, garlic, and the seasonings (garlic powder, paprika powder, cumin and chili flakes).
Ultimately add the cooked rice and shredded chicken and mix well for another 5 minutes.
