Quinoa Salad

Ingredients

For salad:

  • 1 cup of cooked quinoa (chilled)

  • 1 bell pepper diced

  • 1/2 cucumber diced

  • 10 cherry tomatoes, halved

  • 1 medium carrot, shredded

  • 1/2 red onion, chopped

  • 1 can of chickpeas, drained and rinsed

For dressing:

  • 1/3 cup olive oil

  • 3 tbsp (fresh) lemon juice

  • 2 tbsp red wine vinegar

  • 1 handful of chopped parsley

  • 1 handful of chopped cilantro

  • 2 garlic cloves, minced

Instructions

  1. In a small mixing bowl stir together olive oil, lemon juice, red wine vinegar, parsley, cilantro and garlic.

  2. Rinse, core, seed and chop the bell pepper. Dice the cucumber and halve the tomatoes. Chop the onion and shred the carrots.

  3. In a large bowl toss together quinoa, pepper, cucumber, tomato, carrot, onion and chickpeas with the dressing.

  4. Enjoy!
