Hummus Veggie Wrap
Ingredients
For the hummus:
1 can of chickpeas, drained and rinsed
4 tbsp of tahini
4 tbsp (fresh) lemon juice
1 clove of garlic
1 tsp ground cumin
3 tbsp of olive oil
Pepper to taste
For wrap:
4 whole grain wraps
1 cup hummus
1/2 cucumber
10 cherry tomatoes, halved
1/2 avocado
1 bell pepper
1 cup shredded carrots
2 cups mixed salad greens
Instructions
Mix the tahini, lemon juice, garlic, cumin, and olive oil in a food processor for 1-2 minutes until a smooth mixture is achieved.
Transfer the mix to a bowl and set aside.
On a plate add whole-grain wrap. Spread about 2 tbsp of the hummus over the wrap. Layer the wrap with the vegetables.
Wrap the tortillas tightly in a burrito shake, cut in the middle, and serve. Repeat for the rest of the wraps.
